Grainless Granola, Britt's

Healthy Fats
45 g butter
45 g coconut oil

Nuts and Seeds
200 g coconut chips
100 g sliced almonds
100 g walnuts
100 g pecans
30 g sesame seeds

Flavorings
~15 ml vanilla extract
~15 ml and almond extract

Spices/Seasonings
cinnamon
nutmeg
cardamom
garam masala
ginger
allspice
salt
white pepper

liquid sweetener (stevia or sucralose) to taste


Start preheating oven at 350°F.

Toss knobs of butter and oil into pan. Place in oven for a few minutes to melt oils.

Weigh the nuts and seeds in a large bowl. Mix a bit.

Spread nut/seed mix in pan. Stir to coat w/ oils.

Sprinkle w/ seasonings + flavorings and sweeten to taste.

Place pan in oven w/ convection on for 4-6 minutes. Remove from oven and stir for even toasting/browning. Return to oven for another 4-6 mins. – until golden and crisp.


Savory variation:

Season w/ chipotle powder and sprinkle w/ hard cheeses (parm, asiago, romano, etc.)


Note: Timing will vary by preheating time, sheet pan material, etc.
