Wondering if anyone else on here celebrates Passover and if so, what they serve as the starchy/carby options on Passover other than matzah? My kid says he doesn’t like matzah and has never eaten potatoes or corn. Trying to replace his normal carbs (tortillas, rotis, bread, rice, lentils, beans) with something that is kid friendly, fairly simple to make but doesn’t spike BG like crazy. We’ll make haroset for the seder but that’s not going to cover 8 days of affliction.

@TiaG, we have been looking at this for a few months. We are starting Passover late because of travel. Will publish our results.
It helps to follow Sefardic tradition because you have much more choice.
