If you are interested in a thorough look at how the pandemic emerged, I recommend COVID-19: The Pandemic That Never Should Have Happened and How to Stop the Next One by Debora Mackenzie. The author was a biomedical researcher before becoming a science journalist. She looks at the history and science of pandemics generally as the context for diving into the current pandemic.
