# Cheese balls=magic

Anyone else have experience with this? Is it because they are primarily made of air?

ETA: in the original post, I referred to these as cheese puffs. They were vastly superior to those. They were cheese balls. My mistake!

No, it’s because the carbs are left behind on your fingers.

Do you mean that they have little effect on BG?

That’s exactly what I mean! I hadn’t had them since, oh, jr high or so. Then this summer on a whim I bought some for an indulgence on vacation for the kids. Well, of course, resistance for me was futile. I anyicipated and bolused, but no major effect. Inexplicably, today while shopping at Target, I fell for my kids’ cheese-puff request again. And once again, resistance for me was not an option. And yet my bg isn’t soaring. What gives?

Incidently, I have a similar experience with popovers. Again, mostly made of air, but the rosemary honey butter?! To die for!

21 pieces have 13 grams of carbohydrate and 10 grams of fat. Maybe the fat mediates the carbs? Or the salty, cheesy goodness does? 😋

I don’t think that was my experience with cheese puffs, but it’s been a long time, so I’m not entirely sure. Awesome for you though!

Not cheese puffs exactly, but has anyone else tried “moon cheese,” aka freeze dried cheese? Crunchy, sort of squeaky (in the way cheese curds are) cheese bites with 0 carbs. Starbucks sells them, and you can buy on Amazon. Also I sometimes get shredded freeze-dried cheese on [nuts.com](http://nuts.com), but that’s in a less conveniently snackable size/shape. Makes me wish home freeze-dryers were more affordable, because I would freeze-dry my own cheese snacks and maybe try to make some meat chips or something too (I bet freeze-dried pepperoni would be great). I’ve seen DIY hacks online, but it’s a bit beyond what I’m willing to put into it.

They aren’t freeze dried, but have you tried Wisps? They are tasty.

Also, they are temporarily out of stock, but I see no reason why everyone here shouldn’t be freeze drying at home.

Not freeze-drying, but I just made eggplant “jerky” by drying it in the oven set to its lowest setting for 10 hours. It turned out a bit burnt, but tastes good enough that I’m going to give it another try. I’m not sure I’ve ever eaten freeze-dried food, though. Does it taste like the original? It sounds like a neat concept. I make all my own food from scratch, so I’d be interested in it if the machines weren’t so outrageously expensive.

It tastes exactly the same—flavors are more preserved in fact I’d say than with other forms of drying. Freeze-dried fruit for example (like crispy strawberries in Special K) tastes like fresh fruit more than the jammier flavor in dried or cooked fruit. The texture is different as well—it’s crisp/dry, vs chewy like conventionally dried things.

Moon cheese is apparently currently on sale for the lowest price I’ve seen at Target—still not cheap, but at that price, not as bad:

I haven’t tried those, will have to check them out!

And haha yeah—I think I found smaller home versions for about $5k when I last looked, but that was still beyond my budget and they were also huge so wouldn’t work for my current apartment living.

Totally with you on cheese puffs. I buy them infrequently, under the guise of “for the kids,” but honestly I can take down 1/2 a bag in one sitting. SO GOOD! And don’t get me started on popovers… Yum!!!

How easy are they on BG for you? I am curious 🙂 We have not made any since my son was diagnosed.

Hmmm… I have to be honest, I am not as rigorous as many of you here with testing/observation and I haven’t had a popover for awhile, but I would treat them as I would a bagel toasted with butter (i.e., carb w fat). So, weigh for carb count and (pre)bolus accordingly?? I would definitely give it at try! They are so, so good!

And why not, right? “Unlimited” figures somewhere in the concept of this forum?!??! I’ve been at this for 25 years now (starting at age 20, so with a slightly different perspective) and even with a late start and lots of forgiveness toward myself, I _still_ get burnt out. You need to allow your family to try new things, experiment, and even occasionally fail (with a good safety net in place). Especially with things that are bound to make you happy! Well, what the hey! If you put it in those terms I can’t turn this down. We are on! We will plan for popovers this weekend.

But, this time, my wife will be IT, she is the popover specialist. She tells me as we speak, that they key for her is to start with s cold oven:-)

YES! I’m trying to cut back on sugar/carby things since going a little crazy during my birthday week, and y’all aren’t helping! 😜

P.S. tonight I did cave and when my hubby got some ice cream, I pulled mine out, too…chocolate walnut brownie coconut milk ice cream…and added chocolate chips…and peanut butter…but hey, started at 114 and ended at 100, sooooooo, win!
