Oh - and sometime there will be a bit of pudding in the back of the fridge months later and it always tastes better.

Dude, @Beacher and @Aaron I can’t believe how much Christmas pudding knowledge you just shared! This is amazing!! Only on FUD.

Nope, she steamed it for 8 hours on Saturday and served it Tuesday - and there was a second steaming that happened on that day to warm it up. I’ve got no idea how it should taste. 🤣

It’s done, but it’s not ideal, flavour-wise or texture-wise. Best to leave it a couple of months at least. But the longer it matures, the better. (Like me! 🙃) Helped along by occasional doses of brandy, rum, bourbon, whatever. (Like me again! 🤪 😋 😇) The one we had this Christmas was part of a batch I made nine years ago.
